Raised in New Orleans, Austin's journey into the heart of the culinary world was not just shaped by his cultural roots but also by the adversity he faced during Hurricane Katrina.
Cooking from Adversity: A Dorm Room Makeshift Kitchen
After Hurricane Katrina displaced millions, Austin found himself crammed inside a decrepit dormitory at Southeastern Louisiana University. While many struggled to cope in the aftermath of the storm, Austin tapped into his culinary instincts, cooking meals for refugees from a condemned dorm room. "I’m really making meals out of nothing," he recalled, utilizing whatever equipment he had—a couple of George Foreman grills and hot plates—to feed up to 80 people each day. It was in this makeshift kitchen that his family first recognized the depth of his culinary talent, a turning point that ignited his passion for cooking.
A Culinary Education Forged in Tradition
Despite his challenges, Chef Q made the pivotal decision to pursue formal training at the Culinary Institute of New Orleans, cementing his desire to become a chef. Attention to heritage drove his philosophy in the kitchen; he wished to introduce the authentic flavors of his upbringing to his new city, San Diego. "That was just the way of life. Everybody has to know how to do for themselves," he explained, emphasizing the communal essence of cooking deeply rooted in his culture.
San Diego: A City of Sunshine and Opportunities
Arriving in San Diego in 2019, Chef Q began to share his unique culinary prowess at various local eateries, including the Grind & Prosper hospitality group. Louisiana Purchase in North Park has become his flagship location, where he crafts non-touristy Bayou dishes that resonate with fellow ex-pats and locals alike. His journey from a post-Katrina kitchen to executive chef showcases not only his talent but his dedication to community. "The hub that we built at Louisiana Purchase is so strong and so cool," he reflects about forming connections with his clientele.
Fostering Community Through Culinary Excellence
Beyond preparing delicious meals, Chef Q emphasizes the importance of community. He actively participates in local fundraisers and charity events, including aid efforts for the victims of the 2024 floods in Southeast San Diego. Furthermore, he champions the voices of Black chefs by co-founding Bad Boyz of Culinary, aiming to support and mentor emerging talent.
